If you have a player entered into the team roster as a particular jersey number for example Susie #8 but then in a game she is playing she switches jerseys and is now Susie #10 and you only change her number in the actual game line up but not in the team roster. For her player card and team stats are all her at bats captured (#8 and #10)?

Yes, they are still captured in cumulative stats. The jersey number is just an extra piece of information about the player. We use internal identifiers to store player data.
