Hello,
Newbie here. Thanks for the forum. i am really emjoying iscore for baseball!
Is pinch hitting for the pitcher just a matter of making an offensive substitution from the roster, then when the team goes to the field making a defensive substitution for the pitcher with the new pitcher? I feel like there should be a pinch runner button.

Welcome to the board.
For the batter for the pitcher there is a DH option when you are making your lineup. When you tap the player and the player info screen comes up tap
batting =yes, field position DH.
Unless a new pitcher comes onto the field there is no need to sub the pitcher, iScore does not automatically make defensive changes when an offensive change occurs or vise versa. But if you are changing the pitcher, just tap the pitcher and chose the replacement player. This can be done for any defensive position.
There are options for both pinch runner and courtesy runner. Tap the runner on base, tap the option you chose on the bottom of the menu.

The DH works for any defensive position. It could be your LF who is the weakest hitter so you place the LF in the 10th position, batting=no, position=LF. The defensive player who is not batting is always placed 10th in your lineup and shown as non batting.

In my son's league they let the pitcher bat. There is no DH. Often when we want to make a pitching change, when our team is at bat, we use a pinch hitter for the pitcher, then after batting when we go out to the field the new pitcher goes out to pitch. Is this considered 2 substitutions, one for the pitcher that was to bat & another when the new pitcher takes the field?

You would enter the offensive and defensive substitution as two separate things. You can do them both at the same time if you know who the players involved are. Or you can just do them as you see them (i.e. you may see the new batter, but not know who the new pitcher is until they are back in the field).
