At a tournament, I create a new game, Select my team and then a new team to create the opponment.
I create a quick roster,
I start the game, and then edit the lineup for the opposing team, Add names and numbers.
We play the game and all is fine.
The next day we play the team again. I select the opponemnt and our team, select play, and the numbers for the opposing team are all 0
I have to edit the team again.
Shouldn't the numbers stay?

The numbers do not stay because you are editing them on the Lineup, not the team roster. Players can have different numbers from game to game, so we keep the jersey numbers with the lineup for each game.
When you have made changes during a game, if you view the starting lineup for the game, and press Options in the bottom right, there is a "Copy Lineup -> Roster" option that you can use to copy your lineup changes back to the team roster. That way future games you create from the Team Roster will default to the updates you have made.
