How to change from hit triple with rbi then tagged out 9-6-5 TO hit DOUBLE with rbi then tagged out 9-6-5? When I tried to do this I lost the Plate appearance for the batter.

You will have to just override the stats in this case and add a note to the play. You will want to edit the number of triples for the player by reducing by 1 for the game, and increase the doubles by 1. You can see how to do this at the following link from the iScore FAQ:
