I've been noticing that when I sent the scheduled date/time, the actual recorded date/time is not what I selected...it's off by 1 or more minutes. What I "think" is happening, is that, let's say, I set the time for 3:00. However, I make other changes to the game before I "Save" the game. The time between when I set the time and "Save" the game, is added onto the end of the scheduled time. So, if set the time and immediately click "Save", the time is right on...but, any time between the time setting and "Save" more than a minute later is added onto the time.

it is a known issue posted elsewhere on the board. (you are not crazy). It is actually been identified as root cause in the iOS operating systems use of seconds to round.
