The only way we really have to support adding an additional batter to the lineup after you have already batted through the whole lineup is to reserve a spot at the beginning of the game, and use "Skip Batter" if the player does not show up. If you are expecting that someone may or may not show up in the middle of a game, you can put them in the last spot of the lineup (batting=Yes), and when it is their turn to bat, you can use "Misc, Skip Batter" to skip their turn until they do show up. If they never show up, you can just skip them any time.

It is a little awkward, but a lineup that can grow as the game progresses is a bit of an awkward situation as well.
