When a pitch is thrown and the catcher immediately throws the ball to a base to attempt to get the runner out, is that considered a Pickoff Attempt?

If the catcher is throwing behind the runner (i.e. it is not a stolen base attempt by the runner), then I score it as a pickoff attempt.
