Wonder if there is any way to just score one players stats? If not can I just makeup a fake roster and just keep the score of the one player as they bat? Then transfer the data over to the web at the end of the games to calc. her stats

You can sort of do it, but you lose a lot of context by trying to just track a single player. For example, if you did not track that batters were on base before the player came up, you would not be crediting the player with RBIs, and you would not be getting the averages "with runners in scoring position". Scoring a Fielders Choice would be awkward because typically you would have another player on base getting out when the player reaches on fielder's choice. You would not be able to score Sacrifice Flies because it requires a runner scoring from third.
iScore was really intended for scoring the complete game, and then it can calculate the complete statistic for you automatically. Trying to score for a single player will actually limit the power of what iScore can do for you.
