Change a hit to an out
Our stat man incorrectly put a play as a hit with a pick off, when in reality it should have been a straight 1-3 sac bunt. Is there anyway to change that after the game has ended?

Yes, you can make this change. Just go to Game Manager, select the game, click Pitch by Pitch, scroll to the pitch this play occurred on, and select it. There will then be an option to Edit the play, and you can change how the player made it to the base.

I tried the exact same thing but when I go into the play by play it won't let me change a safe call to an out or an out to a safe. I had to redo the whole game.

You can not change safe to out or out to safe. That would change the outcome of the game (you would suddenly have 4 outs instead of 3 or 2 outs instead of 3... neither would be correct). If you marked a play as safe that should have been an out, or out that should have been safe, you should immediately press Undo while scoring, and you can re-enter the play at that time.
You can always Undo to the point of a problem and continue scoring from there.

Is it possible to change the result of a skipped player after a game has ended, without "undo-ing" all the way back to the problem? I missed an at-bat, skipped the player, then recorded the rest of the inning, i.e. only 2 recorded outs in my scorebook for the inning. Incidentally, the player had struck out, so no real issues for outcome of the inning or the game except recording the K for the pitcher and hitter.

You can not change the outcome of an at bat after the fact. You can change how that outcome came about (i.e. player was Safe at First because of a single, or because of an Error), but the outcome of the play must still be the same (i.e. player was out, player was safe at first, etc).
Unfortunately, this means you can not change a Skipped Batter's result. In the future, if you know a batter made an out, but did not know how, you can enter it as an out, and later change the way the out was made in the Pitch by Pitch listing.

Is it possible using the method listed above to score a runner from , say third base and move another runner up without undoing all the scoring to get back to this point?

NO. that type of change, from not scoring to scoreing, is considered a game changing outcome of an at bat. Current versions would not let you make that change in pitch-bypitch editor.FTMSupport wrote:You can not change the outcome of an at bat after the fact.
