Touch and hold the icon at the far right of each player and drag the players to where you want them.

to be clear

you set up Team Rosters in Team Manager,

You set up Game Specific Line Ups in Game Manager
(for each game just before you start to score a game)

Game Specific Line up - how to ....
After you set up a new game, the next step is to hit "Play" from game info screen, the next screen will be a review of the Starting Line ups from the roster, here you have the chance to move players up/down in the line up (drag the three line icon on the right) or add/deleate players if they are picked up for the game or have left the team. You thus create the game specific line up for each team, home and visitor, and thease are set when you hit Done and go to the "Touch Play to begin..." screen.

.. also if you are already scoring a game, and you encouter a mistake in original line up order, you can brin up the starting line up screen at any time by Misc button > show starting line up.

FYI
tip: use substitution screen(click on batter icon or player circle), not starting line up screen (Misc >Show Starting line up) for normal substitutions (e.g. pitcher 2, releives pitcher 1, or player 4 subs for player 6 at shortstop), Use starting line up for intial game day players and batting order and intial fielding positions.
