I did not realize that the last player in the lineup was not in the game until mid way thru the game.

I discovered this one batter after his first at bat, so I skipped the next batter and got back in sync quickly and was able to do a "skip batter" for his 2nd & 3rd at bats.

I need to re-assign his at bat to the batter immediately following him. Is there an easy way to do this without having to re-score the entire game from that point.

Unfortunately, I don't know of any way to do it without re-scoring the whole game. The edit game function is designed to only change non-game-changing game information (i.e. a hit to an error). Outs, runs, anything that may change the outcome of the game cannot be changed.

the outcome of the game will not be changed, assigning a non batters ground out to the next batter

You should actually be able to go to pitch by pitch, and sub in the first batter for that 10th spot for just that one pitch. Then sub him back to the first batting spot at any point after that at bat. He will show in both places on the scorecard, but it will fix the statistics for the game.
