Tap the stat icon in the bottom right corner on the main scoring screen (looks like a spreadshheet / grid on most devices).

was trying to find it while the game was going on...tough to do. 1st year using this app.

Question about roster...I entered the opponent roster on the game screen; however, they are not showing up on the team roster screen for the next game that we might play against them. What do I need to do about that?

See Tip #6 in the iScore documentation here:

http://iscoreleagues.com/manual/#h.ej3nmdzcberl

It describes the difference between a Lineup and a Roster, and how to keep them in sync so that the players carry forward from game to game.

Welcome to Iscore Community

The user document in the provided link by FTMSupports is a good resource for 1st year users

The key in tip 6 for you is learning the use of

"Copy Line Up to -> Roster "
( under options button on starting line up screen)

When the game is over, and you want to do the "copy lineup to roster" option, go to Game Manager, select the game, select Pitch by Pitch, tap the Game Starts event, then tap Edit next to Starting Lineup. You can then tap the Options, Copy Lineup -> Roster from there.
