When batting the full lineup, sometimes a player gets sick, hurt, etc. Is there a way to remove a batter for the rest of the game after you have been through the lineup once. I have been using skip batter each time he comes up to bat.

No. Skip batter is the correct method.

I had a player get hurt during the game and (oops!) didn't use the skip batter method... instead, I recorded an out under OTHER. Now that the game is over, how can I go back to correct it? (Just a batting avg concern at this point.) Thanks!

The best bet in that case would be to create a dummy player and sub the dummy player in at that point of the game so the incorrect scoring is assigned to that person.
