How do I look at pitch count by inning during the game?

You can view the inning recap. On a tablet device it is available from a toolbar icon. On iOS, "slide" the top scoring section to the left twice to reveal the Recap option. On Android phones, it is under the Menu option on the main scoring screen.

I'm not sure what you mean by a tool bar icon. There is an icon at the bottom of my android tablet that looks like a little score card. I can click on that and get some info. But when the coach comes and asks me for a pitch count, it usually takes awhile before the pitch count catches up. Like maybe half an inning. I'm having to keep tally marks separately so I can keep that info handy.
Is that the icon? I'm hoping for a quicker way to give the information.

There is an icon that looks like an "i" with a circle around it --- it is the Inning Recap icon. It should details for each pitcher by inning. It only shows past innings (current cannot be "recapped" until the inning is complete).
