Adding line ups as the game goes

How can I (if there is a way) add the players/line up as they come to the plate?

The suggested approach if you are scoring for a team you don't know would be to create a Quick Rosters for the opponent with the number of players you expect to bat (err on the side of too many). As each player comes to the plate, you can edit the player's name / number to match the current batter. When you see the first batter back in the on deck circle, go to Misc -> Show Starting Lineup and set the remaining players to Batting = NO.
