How can I adjust a pitch count at the end of an inning or end of a game?

Not sure what you mean by adjust the pitch count. The pitch count is kept automatically as you enter balls / strikes. As long as you enter the balls / strikes as they are thrown, the pitch counts will reflect the number of pitches in the game. If you miss pitches, and want the stats to be updated for pitches you have missed, you can go to Game Manager, select the game, select Pitching Stats for the appropriate team and add in the missed # of ball or strikes by tapping on the appropriate value for the pitcher.
