I scheduled a game with a team that I did not enter a roster for.
It appears I can not use quick roster from within the game roster page. So my only choice is to 1) enter the names or 2) delete the game, go to team, do a quick roster there, create the game again. Correct?
I didnt want to do quick roster just yet, as I might get the actual roster at some point before the game.
Thoughts?

The ability to add Quick Rosters from the Lineup as opposed to the Team Roster is a feature that is on our list. In the meantime, you can always use Quick Roster for an unknown team, then just edit the generated players to the correct names as you learn them (either before the game or during the game). When the game is over, go to the Lineup screen for the game, select Options, and then select "Copy Lineup -> Roster", and it will copy all the updates you made to the lineup during the game back to the Team Roster as well so the next time you face the team, all the names will already by in place.

I assume you hit add from the game manager screen, for visitor/home you hit New Team, added the name... on this screen at the bottom right corner is a quick roster option. I'm guessing that you hit save and not quick roster? If so then your options are to enter name real or fictitious or go to team manager to create a quick roster.
