One of my slow pitch softball leagues allows for 11 players defensively. Is there a way to show that in the plays of the game without making notes on the play?

iScore only allows up to 10 fielders. You can use the 10th spot (OF) and just swap between the 10th and 11th player (whoever makes a defensive play) as necessary to get the defensive stats correct for each play. Chances are they are not making a lot of plays during the game so it would not be too hard to do a defensive change as needed. You can have any number of players in the batting lineup, so this would not be effected.
